Pudding Man (Jus Cool Restaurant)
The "Pudding Man" is Edgar Wallace, a Priory local who's turned baking Jamaican puddings on eight coal stoves into an international tourism story — he's been featured by Jamaica's Ministry of Tourism and has a following well beyond St. Ann.
His stand, Jus Cool Restaurant, has grown from pudding alone into conch fritters, toto, sprat, fried chicken, ackee and saltfish, and a small mini-market. It's a genuinely local stop, not a tourist-trap version of one.
